Paris hides a specialty coffee scene far more discreet than its tourist-facing terraces. Behind a narrow shopfront in the Marais, inside a spice shop in the 1st arrondissement, or tucked at the back of a courtyard in the 7th, baristas serve precise extractions made with beans from small French roasters. The pace is unhurried, the counters short, the cups full of bright, clean notes rather than burnt bitterness.
The whole thing fits into a half-day: three or four addresses, a filter here, an espresso there, a detour to a roastery to bring a bag of beans home. You walk between each stop to let the last one settle and give your palate a chance to breathe. The notebook is for writing down the producer, the process, the harvest year, the feeling. By the end, you leave with a personal map of your favourite spots.
