An evening around the Big Green Egg takes its time. Mid-afternoon you light the coals and watch the thing warm up while the pool is still in use. Someone peels garlic, someone slices mango, someone opens a Polar beer. The villa slowly becomes a kitchen. The pace sorts itself out.
Around seven the first piece of meat goes on, picanha or a thick chicken thigh, plus a tray of vegetables in a cast-iron pan. The smoke drifts across the terrace, dim lights on, music at a reasonable volume. Everyone sits down at the long dining table at the same time. No phones, but a second round. Then coffee outside, feet up on a chair, the pool as a mirror.

Suggestions
- Light the Egg at least an hour before dinner, not right before the first bite.
- Do your shopping at Albert Heijn or Van den Tweel, they carry picanha vacuum-packed.
- Keep a spray bottle of water by the Egg for unexpected flare-ups.
- Marinate the meat at the start of the afternoon, a few hours is plenty.
- A bowl of mango with chili and lime works surprisingly well as a side dish.
