The traditional Gouda cheese market takes place every Thursday morning in summer on the Markt. Farmers arrive with wheels of cheese on horse-drawn carts, after which the weighing and trading follow a centuries-old ritual. The cheese is real and for sale, as this is at once folk theatre and genuine commerce.
