The best spots are tucked into the pink alleyways around the Capitole, in the passages of the Carmes, and on the other side of the Garonne in Saint-Cyprien. For a peaceful table, aim for late morning on a weekday, after the student rush and before the lunch crowd. The light is soft, and the roasters take time to talk you through their beans.
The walk fits into half a day on foot. Start with a slow filter near the Capitole, cut through the Carmes neighbourhood for a single-origin espresso, then cross the Pont-Neuf toward Saint-Cyprien to finish with a local pastry. The best independent cafés open around nine and often close in the late afternoon, so plan to wrap up before five.
